fix: name the ClickHouse metrics receiver sql_query - #277

otel collector 0.162.0 logs sqlquery as a deprecated alias. The receiver and its docs now use sql_query, which the pinned collector validates cleanly.

The pinned collector, 0.162.0, warns that sqlquery is a deprecated alias. This renames the receiver in config/otel-collector/config.yaml and its two doc mentions. otelcol-contrib 0.162.0 validate exits 0 on the new config, and make check-compose passes.
