Refresh README, changelog, and JSON schema docs#293

Condense the main README by moving verbose JSON examples and the error code table into docs/json-schema/v1/README.md where schema consumers will find them. Add a quickstart section, drop the [UNOFFICIAL] label, update the feature list, and fix stale links. Backfill the changelog with entries for every release from v2.0.9 through unreleased.
