Bumps actions/checkout from v6 to v7 on every workflow that checks out the repo.

Root workflows CI, GitHub Pages, Publish, and Validate Maven Signing each update checkout on every job that uses it (including matrix assemble-rust and downstream build/publish jobs). The sensortag sample updates the same pin in Android, iOS, Webapp (PR), and Webapp (Pages packaging) workflows. No step inputs or job logic change—only the action version.
