Add a check to the build script to verify that FFMPEG is working / non corrupted.

Its possible a FFMPEG version we download could not work or something but still extracts and builds properly.

**Describe the solution you'd like**
Do a very simple operation with FFMPEG to ensure it is minimally functional and not completely broken?
