Any suggestions for faster FPS?

Hi! I'm really new to microcontrollers and Arduino as a whole. I really appreciate your contribution, and I can sort of get things working with it. I'm using the ESP32S3 Sense (which is OV2640). When I set the frame size to anything above 640x480 with any reasonable amount of image quality, the device just stops sending frames. VLC just eventually shuts down the stream. I have a few questions:

1. If I'm reading things correctly, UDP is faster than TCP. But I don't know how to ensure the stream is in UDP.
2. What quality of JPG were you using for your tests listed in the README?
3. I tried to get more logging, but was unable to. You can see my line 1 of my sketch is to enable debugging and that I've got the level set to Info, but I don't see any additional information. Would you expect this to tell me why frames are stuttering?

ok so the client decides the transport protocol udp, tcp etc so need to change in client, if using VLC read the readme how to change
I used quality 10 with ov2640
I have fixed up logging issue, thank for pointing it out now need to add a RTSPConfig.h to the sketch
