Docs are outdated

That setting is documented. I wonder if RTD isn't building the docs.

Fixed in #525 — now builds correctly:

I do believe their correct syntax for that here now would be:

  install:
    - method: pip
      path: .
      extra_requirements:
        - docs

for pip install .[docs]

(also you can bump the OS to 24.04 while at it)

EDIT: Actually I think that could fix it, I've posted #573 to make it easier to review @escattone
