I think the Cobaya documentation is better than any example I have. In terms of actually running it, the documentation also has an example script for NERSC, which I found works well in combination with the cobaya-run-job command.
I recommend starting with the Cobaya MCMC, as that works out of the box. I also got Polychord to work, but that can be a little more complicated because I had to install it manually.
