Bump postcss to 8.5.10 (#173)

## Summary
- pin `postcss` to `8.5.10` via npm overrides
- refresh the lockfile so `vite` and `@tailwindcss/postcss` resolve the
patched version

## Validation
- `npm run build` succeeds
