changelog: fix kiln health client list (Claude Desktop / Claude Code / Codex)

Listed Cursor / Claude Desktop / Windsurf as the clients `kiln health`
self-heals against; the actual detected set per `kiln/src/kiln/cli/install_mcp.py`
is Claude Desktop, Claude Code, and Codex.  Cursor is the example of
"anything else, configured manually"; Windsurf is not in the supported
set at all.

Caught during the v1.1.1 release fact-check sweep — pre-publish edit
of the same release.
