[fix] Replace wrong plot image of docs/quickstart/simualtion.ipynb (#774)

Update simulation quickstart notebook outputs and code

Refreshed cell execution metadata, outputs, and execution counts to reflect a new run. Updated code to use `bp.dyn.ProjAlignPost2` instead of `bp.dyn.FullProjAlignPost`, and changed spike monitoring to return `self.E.spike` and `self.I.spike` directly. Removed outdated warning and error messages from outputs for cleaner notebook presentation.
