Document safe vs unsafe AP examples for public issues

Add a short guide showing what is safe to share publicly and what should never be shared in GitHub issues.

Safe:
- fake rows
- header-only samples
- synthetic supplier names
- redacted screenshots

Unsafe:
- real suppliers
- bank details
- tax IDs
- payroll/customer data
- live invoices/payment batches
