[Task]: Remove doc Feature From Crates

Current Behavior

The doc feature existed in a previous version of running doctests and is believed not to be needed any longer.

Expected Behavior

Evaluate if the feature is needed and remove from all crates if not.

To that same thing, I think the std feature can be removed from all the crates that don't actually build anything except for tests for std.

Please also evaluate if it was added to make the other workflows more convenient since they can rely on the feature being present instead of probing. Not that we'd need to keep it if that's the case, but it'd be good to know.
