I don't see this being added into base Moonfin, but I would recommend you check out a compatible plug-in called SmartLists. With that, you could probably define some rule sets to automatically create a playlist per audio language, which would give you a clean way to quickly browse for the media items that match without checking the individual media pages themselves.

Any reason why not? A playlist or a collection can help indeed, but there are many ways to browse the media library, most of which are incompatible with this approach. Especially on the overview page you already show tags for the quality and audio format, but to see the languages I have to go through the audio selector unnecessarily.

I think kometa can do something similar for Plex, not sure if it works with jellyfin. This is probably better handled by the artwork you save for items rather than moonfin.

Another problem with adding this in moonfin is that if you have more than 1-2 languages for an item, it'll start crowding up the poster/detail screen very quickly

Yeah, but this is why it is supposed to be optional. If people don't like it, they don't have to enable it. Most people pull their artwork from various movie databases which do not include language icons for obvious reasons. I don't see what's preventing this to be added, if Jellyfin Enhanced, a JavaScript plugin can add this on the fly to the default Jellyfin web interface.

It'd also be possible to use the same space as is used for ratings. (Although this does not show in collections)
